We bake bread, cookies, granola, crackers, and pastries fresh daily for our market and restaurant. All of our baked goods and pasta are made with organic, Michigan grown grains milled on our stone mill and with organically grown sifted white flour from a mill in Nebraska.

Breads

Our goal is to bake delicious and healthy bread for daily eating. All of our bread is naturally leavened and fermented for 12 to 24 hours. Slow fermentation increases flavor, develops texture and makes bread more nutrient rich and easier to digest.

Pasta

Our pasta is made using only two ingredients: organic whole-grain durum wheat milled in our stone mill and well-water. The four shapes we make are bucatini, gemelli, orecchiette, and radiatori.  The semolina flour means our pasta is brown - don’t be scared.

Pasta is available daily in our market and always featured on the menu.

Baked Goods

We have a rotating availability of baked sweet treats, plus granola and crackers. It’s all very tasty and made with solid ingredients, from organic unbleached cane sugar to local glass-jarred milk and the finest butter Michigan has to offer.  Some are vegan too.  And the majority of our goodies feature Michigan grown whole grains milled in house. It really is something special.

Mill & Corn

We mill every week on two stone mills - one is for milling flour and cornmeal for bread, pastries and polenta, and the other is for milling wet nixtamalized corn into masa for tortillas. Stone mills make the highest quality flours available.

Our freshly milled, organically and regionally grown grains are used in all aspects of Farm Club’s kitchen and bakery. We also mill for retail sales in our market and for a handful of restaurant accounts in Traverse City.
